Use VOL_PROJECTS for project directories across opencode and vscode stacks

Browse Source 
- Replace VOL_PATH with VOL_PROJECTS for project mounts
- Remove unused opencode /data volume
- Update sample.env and AGENTS.md with VOL_PROJECTS convention
